Here's a recipe for Aloo Paratha, a popular Indian flatbread stuffed with spiced mashed potatoes:

Ingredients:

For the Dough:
- 2 cups whole wheat flour (atta)
- Water, as needed
- Salt, to taste
- 1 tablespoon oil (optional)

For the Potato Filling:
- 3 medium-sized potatoes, boiled, peeled, and mashed
- 1 small onion, finely chopped
- 2 green chilies, finely chopped (adjust to taste)
- 1 teaspoon ginger paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala powder
- 1/2 teaspoon amchur (dry mango powder) or chaat masala
- Salt, to taste
- Fresh coriander leaves, chopped (optional)

For Cooking:
- Ghee or oil, as needed

Instructions:

1. Prepare the Dough:
   - In a large mixing bowl, combine the whole wheat flour and salt.
   - Gradually add water and knead the flour to form a soft and pliable dough. Add a tablespoon of oil while kneading for softer parathas (optional).
   - Cover the dough and let it rest for at least 15-20 minutes.

2. Prepare the Potato Filling:
   - In another bowl, combine the mashed potatoes, finely chopped onion, green chilies, ginger paste, cumin seeds, coriander powder, garam masala powder, amchur or chaat masala, salt, and chopped fresh coriander leaves (if using). Mix well to combine all the ingredients.

3. Assemble the Aloo Parathas:
   - Divide the dough into equal-sized balls, slightly larger than the potato filling portions.
   - Take one dough ball and roll it out into a small circle on a floured surface.
   - Place a portion of the potato filling in the center of the rolled-out dough circle.
   - Bring the edges of the dough together to cover the filling and pinch to seal. Flatten the stuffed dough ball slightly with your hands.

4. Roll out the Stuffed Parathas:
   - Dust the stuffed dough ball with some flour and roll it out gently into a larger circle, about 6-8 inches in diameter. Be careful not to break the dough and ensure the filling is evenly distributed.

5. Cook the Aloo Parathas:
   - Heat a tawa or griddle over medium heat. Once hot, place the rolled-out paratha on the tawa.
   - Cook the paratha for about 1-2 minutes on one side until bubbles start to appear on the surface.
   - Flip the paratha and drizzle some ghee or oil around the edges.
   - Cook the paratha on the other side until golden brown spots appear, pressing gently with a spatula to ensure even cooking.
   - Repeat the process with the remaining dough balls and potato filling.

6. Serve the Aloo Parathas hot with yogurt, pickle, chutney, or any side dish of your choice.
