GOSHT ALOO
Aloo Muli Paratha is a delicious Indian flatbread stuffed with spiced mashed potatoes and radish. Here's a recipe to make Aloo Muli Paratha:
Ingredients:
For the Dough:
- 2 cups whole wheat flour (atta)
- Water, as needed
- Salt, to taste
- 1 tablespoon oil (optional)
For the Potato and Radish Filling:
- 2 medium-sized potatoes, boiled, peeled, and mashed
- 1 cup grated radish (muli), squeezed to remove excess water
- 1 small onion, finely chopped
- 2 green chilies, finely chopped (adjust to taste)
- 1 teaspoon ginger paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala powder
- Salt, to taste
- Fresh coriander leaves, chopped (optional)
For Cooking:
- Ghee or oil, as needed
Instructions:
1. Prepare the Dough:
- In a large mixing bowl, combine the whole wheat flour and salt.
- Gradually add water and knead the flour to form a soft and pliable dough. Add a tablespoon of oil while kneading for softer parathas (optional).
- Cover the dough and let it rest for at least 15-20 minutes.
2. Prepare the Potato and Radish Filling:
- In a pan, heat a little oil over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and green chilies. Saute until onions turn translucent.
- Add ginger paste and saute for a minute.
- Add grated radish, turmeric powder, coriander powder, and salt. Cook until radish is tender and the moisture evaporates.
- Add mashed potatoes, garam masala powder, and chopped coriander leaves (if using). Mix well and cook for another 2-3 minutes. Remove from heat and let the filling cool.
3. Assemble the Aloo Muli Parathas:
- Divide the dough into equal-sized balls, slightly larger than the potato and radish filling portions.
- Take one dough ball and roll it out into a small circle on a floured surface.
- Place a portion of the potato and radish filling in the center of the rolled-out dough circle.
- Bring the edges of the dough together to cover the filling and pinch to seal. Flatten the stuffed dough ball slightly with your hands.
4. Roll out the Stuffed Parathas:
- Dust the stuffed dough ball with some flour and roll it out gently into a larger circle, about 6-8 inches in diameter. Be careful not to break the dough and ensure the filling is evenly distributed.
5. Cook the Aloo Muli Parathas:
- Heat a tawa or griddle over medium heat. Once hot, place the rolled-out paratha on the tawa.
- Cook the paratha for about 1-2 minutes on one side until bubbles start to appear on the surface.
- Flip the paratha and drizzle some ghee or oil around the edges.
- Cook the paratha on the other side until golden brown spots appear, pressing gently with a spatula to ensure even cooking.
- Repeat the process with the remaining dough balls and potato and radish filling.
6. Serve the Aloo Muli Parathas hot with yogurt, pickle, chutney, or any side dish of your choice.
