Aloo Matar, or potato and peas curry, is a popular North Indian dish that's flavorful and comforting. Here's a simple recipe to make Aloo Matar:

Ingredients:

- 2 medium potatoes, peeled and cubed
- 1 cup green peas (fresh or frozen)
- 2 tablespoons oil or ghee
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 green chili, finely chopped (adjust to taste)
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon garam masala powder
- Salt to taste
- Fresh cilantro leaves for garnish

Instructions:

1. Heat oil or ghee in a pan over medium heat. Add cumin seeds and let them splutter.

2. Add finely chopped onions and sauté until they turn golden brown.

3. Add minced garlic, grated ginger, and green chili. Sauté for another minute until the raw smell disappears.

4. Add finely chopped tomatoes and cook until they turn soft and mushy.

5. Add turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well and cook the masala for 2-3 minutes until the oil starts to separate from the masala.

6. Add cubed potatoes and green peas to the pan. Mix well to coat the vegetables with the masala.

7. Add water to the pan, enough to cover the potatoes and peas. Bring the curry to a boil, then reduce the heat to low and let it simmer until the potatoes are cooked through and the curry thickens to your desired consistency. Stir occasionally to prevent sticking.

8. Once the potatoes are cooked, sprinkle garam masala powder over the curry and mix well.

9. Garnish the Aloo Matar with fresh cilantro leaves.

10. Serve hot with roti, naan, or rice.
