                       BEEF BIRYANI



Here's a delicious recipe for Beef Biryani, a flavorful and aromatic dish made with marinated beef and fragrant rice cooked with spices:

Ingredients for Marination:

- 500 grams beef, cut into cubes
- 1 cup yogurt
- 2 tablespoons ginger-garlic paste
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- Salt to taste
- Fresh coriander leaves, chopped
- Fresh mint leaves, chopped
- Juice of 1 lemon
- Cooking oil

Ingredients for Biryani:

- 2 cups basmati rice, washed and soaked for 30 minutes
- 2 large onions, thinly sliced
- 2 tomatoes, chopped
- 2-3 green chilies, slit lengthwise
- 1/2 cup fried onions (optional, for garnishing)
- 1/4 cup chopped coriander leaves
- 1/4 cup chopped mint leaves
- 1 tablespoon biryani masala (store-bought or homemade)
- Whole spices (2-3 bay leaves, 4-5 cloves, 4-5 green cardamom pods, 1 cinnamon stick)
- 1/4 cup ghee or cooking oil
- Saffron strands soaked in warm milk (optional, for color and flavor)
- Water for cooking rice
- Salt to taste

Instructions:

1. Marinate the beef cubes in yogurt, ginger-garlic paste, cumin powder, coriander powder, turmeric powder, red chili powder, salt, chopped coriander leaves, chopped mint leaves, and lemon juice. Mix well to coat the beef evenly. Let it marinate for at least 2 hours or overnight in the refrigerator.

2. In a large pot, heat ghee or oil. Add the thinly sliced onions and fry until golden brown and crispy. Remove half of the fried onions and set them aside for garnishing.

3. To the remaining onions in the pot, add chopped tomatoes and slit green chilies. Cook until the tomatoes are soft and mashed.

4. Add the marinated beef along with the marinade to the pot. Cook the beef on medium-high heat until it is browned and tender, stirring occasionally. This may take about 20-25 minutes.

5. While the beef is cooking, bring a large pot of water to a boil. Add salt and whole spices (bay leaves, cloves, cardamom pods, cinnamon stick). Drain the soaked rice and add it to the boiling water. Cook the rice until it is 70-80% done. Drain the rice and set it aside.

6. Once the beef is cooked and tender, sprinkle biryani masala over it. Mix well to combine the flavors.

7. In a separate heavy-bottomed pot or Dutch oven, layer the cooked beef masala at the bottom.

8. Spread half of the cooked rice evenly over the beef masala layer. Sprinkle some of the fried onions, chopped coriander leaves, chopped mint leaves, and saffron-soaked milk (if using) on top of the rice.

9. Repeat the layers with the remaining beef masala and rice. Finish with a layer of fried onions, chopped coriander leaves, chopped mint leaves, and saffron-soaked milk.

10. Cover the pot tightly with a lid or aluminum foil to create a steam seal (dum). Cook on low heat for about 15-20 minutes to allow the flavors to meld together.

11. Once done, remove the lid carefully. Gently fluff the biryani with a fork to mix the layers without breaking the rice.

12. Serve the delicious Beef Biryani hot with raita (yogurt dip), salad, and your favorite condiments.
