                                                                                                    Dum Keema is a flavorful and aromatic dish made with minced meat cooked in a sealed pot (dum) along with spices and herbs. Here's a recipe to make Dum Keema:

Ingredients:

- 500 grams minced meat (beef or mutton)
- 1 large onion, finely chopped
- 2 tomatoes, finely chopped
- 2 tablespoons yogurt
- 1 tablespoon ginger-garlic paste
- 2-3 green chilies, slit lengthwise
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon garam masala powder
- Salt to taste
- Fresh coriander leaves, chopped
- Fresh mint leaves, chopped
- Cooking oil or ghee
- Whole spices (optional): bay leaf, cinnamon stick, cloves, cardamom pods

Instructions:

1. Heat oil or ghee in a pan. Add cumin seeds and whole spices (if using) and let them splutter.

2. Add chopped onions and sauté until they turn golden brown.

3. Add ginger-garlic paste and slit green chilies. Sauté for a few minutes until the raw aroma disappears.

4. Add chopped tomatoes and cook until they turn soft and mushy.

5. Add coriander powder, turmeric powder, red chili powder, garam masala powder, and salt. Mix well and cook the masala until oil separates from the sides.

6. Add the minced meat to the masala and mix well. Cook on medium heat until the meat is browned and cooked through. Stir occasionally to prevent sticking.

7. In a separate bowl, whisk yogurt until smooth. Add the whisked yogurt to the cooked meat mixture and mix well.

8. Add chopped coriander leaves and mint leaves. Mix again to incorporate the flavors.

9. Transfer the cooked meat mixture to a heavy-bottomed pot or a Dutch oven.

10. Cover the pot with a tight-fitting lid or seal the edges with dough to create a tight seal (dum).

11. Cook the Dum Keema on low heat (simmer) for about 15-20 minutes to allow the flavors to blend and the meat to absorb the spices and yogurt.

12. Once done, remove the lid carefully, garnish with more chopped coriander leaves and mint leaves.

13. Serve the Dum Keema hot with naan, rice, roti, or bread of your choice.
