CHEESE SAMOSAS

Here's a recipe for Cheese Samosas, a delicious twist on the traditional Indian snack filled with cheesy goodness:


Ingredients:

For the samosa dough:

1. 2 cups all-purpose flour (maida)

2. 2 tablespoons vegetable oil

3. 1/2 teaspoon salt

4. Water, as needed


For the cheese filling:

5. 1 cup grated cheese (you can use a mix of cheddar and mozzarella)

6. 1/2 cup finely chopped mixed vegetables (such as bell peppers, onions, carrots)

7. 2 green chilies, finely chopped (optional)

8. 1/2 teaspoon cumin seeds

9. 1/2 teaspoon garam masala powder

10. Salt, to taste

11. Vegetable oil, for frying


Instructions:


1. In a large mixing bowl, combine the all-purpose flour, vegetable oil, and salt. Mix well using your fingers until the mixture resembles breadcrumbs.


2. Gradually add water, little by little, and knead into a smooth and firm dough. Cover the dough with a damp cloth and let it rest for about 30 minutes.


3. While the dough is resting, prepare the cheese filling. In a mixing bowl, combine the grated cheese, finely chopped mixed vegetables, green chilies (if using), cumin seeds, garam masala powder, and salt. Mix well until all the ingredients are evenly distributed.


4. After the dough has rested, divide it into small lemon-sized balls. Roll each ball into a small circle, about 6-7 inches in diameter.


5. Cut each circle in half to form two semi-circles. Fold each semi-circle into a cone shape, overlapping the edges slightly, and seal the edges using a little water.


6. Fill each cone with a spoonful of the cheese filling, making sure not to overfill.


7. Seal the top of each cone by folding the edges together and pinching them tightly to seal. You can crimp the edges for a decorative touch, if desired.


8. Heat vegetable oil in a deep frying pan or kadhai over medium heat. Once the oil is hot, carefully slide in the stuffed samosas, a few at a time, without overcrowding the pan.


9. Fry the samosas until they turn golden brown and crisp on all sides, turning occasionally to ensure even cooking.


10. Once done, remove the samosas from the oil using a slotted spoon and drain excess oil on paper towels.


11. Serve the cheese samosas hot with your favorite dipping sauce, such as ketchup, mint chutney, or tamarind chutney.
