Chicken 65 is a spicy, deep-fried chicken dish that is popular in Indian cuisine, particularly in South India. Here's a recipe for Chicken 65:

### Ingredients:
- 500g boneless chicken thighs or breast, cut into bite-sized pieces
- 2 tablespoons cornflour (cornstarch)
- 2 tablespoons all-purpose flour (maida)
- 1 tablespoon ginger-garlic paste
- 1 tablespoon red chili powder
- 1 teaspoon turmeric powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon garam masala
- 1 tablespoon lemon juice
- 1 tablespoon yogurt
- Salt to taste
- Oil for deep frying
- Curry leaves for garnish (optional)
- Sliced green chilies for garnish (optional)
- Chopped cilantro for garnish (optional)
- Lemon wedges for serving

### For the Sauce:
- 2 tablespoons oil
- 2 cloves garlic, minced
- 1-inch piece ginger, minced
- 2-3 green chilies, chopped
- 1 onion, finely chopped
- 1 tablespoon tomato ketchup
- 1 tablespoon soy sauce
- 1 tablespoon red chili sauce
- 1 tablespoon vinegar
- Salt to taste

### Instructions:

1. **Marinating the Chicken:**
   - In a bowl, mix together cornflour, all-purpose flour, ginger-garlic paste, red chili powder, turmeric powder, ground cumin, ground coriander, garam masala, lemon juice, yogurt, and salt to form a thick paste.
   - Add the chicken pieces to the paste and coat them well. Let the chicken marinate for at least 30 minutes in the refrigerator.

2. **Frying the Chicken:**
   - Heat oil for deep frying in a pan or kadhai over medium-high heat. Once the oil is hot, carefully add the marinated chicken pieces in batches, making sure not to overcrowd the pan.
   - Fry the chicken pieces until they are golden brown and crispy. Remove them from the oil using a slotted spoon and drain them on paper towels to remove excess oil.

3. **Preparing the Sauce:**
   - In another pan, heat 2 tablespoons of oil over medium heat. Add minced garlic, minced ginger, and chopped green chilies. Sauté until fragrant.
   - Add finely chopped onions and cook until they turn translucent.
   - Stir in tomato ketchup, soy sauce, red chili sauce, vinegar, and salt. Cook the sauce for a couple of minutes until it thickens slightly.

4. **Combining the Chicken and Sauce:**
   - Add the fried chicken pieces to the sauce and toss them until they are evenly coated.

5. **Garnishing and Serving:**
   - Garnish the Chicken 65 with curry leaves, sliced green chilies, and chopped cilantro for extra flavor and color.
