YAMMY GOL GAPPAY
Gol Gappay, also known as Pani Puri or Puchka, are popular street food snacks in South Asia. They consist of small, hollow puris filled with a spicy and tangy mixture of flavored water (pani) and various fillings. Here's a recipe to make Gol Gappay at home:
Ingredients:
For Gol Gappay (Puris):
- 1 cup semolina (sooji/rava)
- 1/4 cup all-purpose flour (maida)
- 1/4 teaspoon baking soda
- Salt to taste
- Water, as needed
- Oil for deep frying
For Pani (Spiced Water):
- 1/2 cup mint leaves
- 1/4 cup coriander leaves
- 2-3 green chilies
- 1-inch piece of ginger, peeled
- 1 teaspoon roasted cumin powder
- 1 teaspoon chaat masala
- 1 teaspoon black salt
- 1 teaspoon tamarind paste or 2 tablespoons tamarind pulp
- 1 tablespoon lemon juice
- 4 cups cold water
For Filling:
- 1 cup cooked chickpeas (boiled)
- 2 medium-sized potatoes, boiled and mashed
- 1 onion, finely chopped
- Tamarind chutney
- Green chutney
- Sev (thin fried noodles)
- Chaat masala
- Black salt
Instructions:
Prepare Gol Gappay (Puris):
- In a mixing bowl, combine semolina, all-purpose flour, baking soda, and salt.
- Gradually add water and knead the mixture into a stiff dough. Cover and let it rest for 20-30 minutes.
- Divide the dough into small lemon-sized balls and roll them out into small, thin discs (puris) using a rolling pin.
- Heat oil in a deep frying pan over medium heat. Fry the puris in hot oil until they puff up and turn golden brown. Remove and drain excess oil on paper towels.
