SHAWARMA
Shawarma is a delicious Middle Eastern dish made with thinly sliced meat (often chicken, beef, lamb, or a combination), typically served in pita bread with vegetables and sauce. Here's a recipe to make chicken shawarma at home:
Ingredients:
For the Marinade:
- 500g boneless, skinless chicken thighs or breasts, thinly sliced
- 1/4 cup plain yogurt
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1 tablespoon paprika
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 1/4 teaspoon ground cloves
- Salt and black pepper to taste
- Juice of 1 lemon
For Serving:
- Pita bread or flatbreads
- Sliced tomatoes
- Sliced cucumbers
- Chopped lettuce or cabbage
- Thinly sliced onions
- Tahini sauce or garlic sauce (optional)
- Pickles (optional)
Instructions:
1. In a large bowl, combine all the marinade ingredients: yogurt, olive oil, minced garlic, ground cumin, ground coriander, paprika, turmeric, cinnamon, cayenne pepper, ground cloves, salt, black pepper, and lemon juice. Mix well to combine.
2. Add the thinly sliced chicken to the marinade, ensuring it is well coated. Cover the bowl and refrigerate for at least 1 hour, or ideally overnight, to allow the flavors to meld and the chicken to tenderize.
3. Preheat your oven to 200°C (400°F). If you have a grill, you can also grill the chicken for an authentic smoky flavor.
4. Spread the marinated chicken slices in a single layer on a baking sheet lined with parchment paper or aluminum foil.
5. Bake the chicken in the preheated oven for 20-25 minutes or until it is cooked through and slightly browned around the edges.
6. While the chicken is baking, prepare the toppings and sauces for serving.
7. Warm the pita bread or flatbreads in the oven or on a skillet for a few seconds to make them pliable.
8. Once the chicken is done, assemble the shawarma sandwiches by placing a generous amount of cooked chicken on a warmed pita bread or flatbread.
9. Top the chicken with sliced tomatoes, cucumbers, lettuce or cabbage, and thinly sliced onions. Add tahini sauce or garlic sauce if desired, and pickles for extra flavor.
10. Roll up the pita bread or fold the flatbread around the filling to form a wrap.
11. Serve the chicken shawarma wraps immediately, and enjoy the delicious flavors of homemade Middle Eastern cuisine!
