Tamatar Gosht is a popular South Asian dish made with tender pieces of meat (usually lamb or goat) cooked in a flavorful tomato-based gravy. Here's a basic recipe to make Tamatar Gosht:


Ingredients:


- 500 grams of lamb or goat meat, cut into cubes

- 4 medium-sized tomatoes, finely chopped

- 1 large onion, finely chopped

- 2-3 green chilies, slit lengthwise

- 1 tablespoon ginger-garlic paste

- 1 teaspoon cumin seeds

- 1 teaspoon coriander powder

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon red chili powder (adjust to taste)

- 1/2 teaspoon garam masala powder

- Salt to taste

- Fresh coriander leaves for garnishing

- Cooking oil or ghee


Instructions:


1. Heat some oil or ghee in a deep pan or pressure cooker. Add cumin seeds and let them splutter.


2. Add chopped onions and sauté until they turn golden brown.


3. Add ginger-garlic paste and green chilies. Sauté for a few minutes until the raw aroma of ginger-garlic paste disappears.


4. Add chopped tomatoes and cook until they turn soft and mushy, stirring occasionally.


5. Add coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook the masala until oil separates from the sides.


6. Add the cubed meat to the masala and mix until well coated. Cook for a few minutes to seal the flavors.


7. If using a pressure cooker, add enough water to cover the meat. Close the lid and cook until the meat is tender (usually takes about 15-20 minutes after the first whistle).


8. If using a pan, add some water, cover with a lid, and simmer until the meat is cooked and tender. Stir occasionally and add more water if needed to prevent burning.


9. Once the meat is cooked, check for seasoning and adjust salt and spices if needed. Add garam masala powder and mix well.


10. Garnish with fresh coriander leaves and serve hot with steamed rice, roti, or naan.
