mom Kheer is a delicious Indian rice pudding flavored with aromatic cardamom. Here's a simple recipe to make Cardamom Kheer:

Ingredients:

- 1/2 cup Basmati rice
- 4 cups whole milk
- 1/2 cup sugar (adjust to taste)
- 1/4 teaspoon ground cardamom (or 4-5 whole cardamom pods, crushed)
- A pinch of saffron strands (optional)
- 2 tablespoons chopped nuts (such as almonds, pistachios, or cashews)
- 1 tablespoon raisins (optional)
- A few strands of edible rose petals (optional, for garnish)

Instructions:

1. Rinse the Basmati rice under cold water until the water runs clear. Drain and set aside.

2. In a heavy-bottomed saucepan, bring the whole milk to a gentle boil over medium heat. Stir occasionally to prevent the milk from scorching.

3. Once the milk comes to a boil, add the rinsed Basmati rice to the saucepan. Stir well and reduce the heat to low.

4. Let the rice simmer in the milk, stirring occasionally, until it is soft and the milk has thickened to a creamy consistency. This may take about 30-40 minutes.

5. Once the rice is cooked and the kheer has thickened, add the sugar, ground cardamom, and saffron strands (if using). Stir well to combine and dissolve the sugar.

6. Continue to simmer the kheer for another 5-10 minutes, stirring occasionally, until it reaches your desired consistency. Keep in mind that the kheer will thicken further as it cools.

7. In a separate small pan, lightly toast the chopped nuts over low heat until they are fragrant and golden brown. Add the raisins (if using) and toast for another minute, then remove from heat.

8. Stir the toasted nuts and raisins into the kheer.

9. Remove the saucepan from the heat and let the kheer cool slightly before serving.

10. Serve the Cardamom Kheer warm or chilled, garnished with a few strands of edible rose petals for an extra touch of elegance.
