MOLOKHIA
Molokhia, also known as Egyptian spinach or Jew's mallow, is a popular Middle Eastern dish made from the leaves of the molokhia plant. Here's a traditional recipe for molokhia soup:
Ingredients:
- 2 cups dried molokhia leaves (or fresh if available)
- 4 cups chicken or vegetable broth
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Juice of 1 lemon (optional)
- Cooked rice or Egyptian bread for serving
Instructions:
1. If using dried molokhia leaves, start by soaking them in water for about 30 minutes. Drain and set aside. If using fresh leaves, wash them thoroughly and remove any tough stems.
2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they are soft and translucent, about 5 minutes.
3. Add the ground coriander and ground cumin to the pot, and cook for another 1-2 minutes, stirring constantly to toast the spices.
4. Pour the chicken or vegetable broth into the pot and bring it to a simmer.
5. Add the soaked or fresh molokhia leaves to the pot, and simmer gently for about 10-15 minutes, until the leaves are tender and wilted.
6. Season the soup with salt and pepper to taste. If desired, add the juice of 1 lemon for a tangy flavor.
7. Once the molokhia leaves are cooked through and the flavors have melded, remove the pot from the heat.
8. Serve the molokhia soup hot, either on its own or with cooked rice or Egyptian bread on the side.
